International Culinary Exchange in Bangkok, Thailand (September 2025)
In September 2025, three faculty members from our school visited The V School in Bangkok, Thailand, to conduct an international culinary exchange program through food.
Learning from a Thai Cuisine Workshop
In the morning, Chef Ken from The V School led a Thai cooking workshop.
Participants experienced authentic Thai cuisine using local ingredients such as pandan leaves and holy basil—ingredients that are rarely available in Japan.
“Our ingredients smell completely different!” our faculty members remarked in surprise. The experience highlighted the importance of encountering the real thing—flavors and aromas that can only be fully appreciated on-site.
Sharing the Techniques of Japanese Cuisine
In the afternoon, roles were reversed. Our faculty members demonstrated the fundamentals of Japanese cuisine to The V School students.
From how to prepare dashi (Japanese soup stock) to proper knife techniques, the basics of Japanese cooking were carefully explained. The students watched intently, absorbing every detail.
This was followed by a joint cooking session. Despite language differences, communication naturally emerged through the shared language of cooking—a powerful reminder that food connects people beyond words.
Meeting the Owner of Mango Tree
As part of the exchange, we also held an online meeting with the owner of the Thai restaurant brand Mango Tree. An in-person networking event was hosted at Mango Tree Surawong, where we enjoyed a wide variety of Thai dishes while discussing possibilities for future collaboration.
Looking Ahead
This exchange has led to concrete plans for a short-term study abroad program for Japanese students.
We are currently developing a small-group program (fewer than 10 participants) focused on learning Thai cuisine and Japanese cuisine fusion techniques.
